The way I think of depth is a measure of front to back rather than left to right (stereo image). Imagine a picture taken with a camera in which the background is blured rather than plain flat. That effect creates a sense of depth and dimension in the image, which ads a level of realism. The same principle applies in music. A mix can be flat and sound 2-dimensional or it can have depth and sound 3-dimensional.
We can hear depth and openess when our ears are listening to the space around the instruments coupled with well-preserved transients. It's the air that surrounds them and glues them together that gives us that sense of space and dimension.
For that same reason the more we compress a mix and squeeze its dynamic range - the more we loose depth. An easy way to imagine this is with a glass of water which is half empty. The more we compress a mix and its individual elements - the more the glass fills up with water - the less air remains in the glass. Hense we loose depth.
If you are chasing depth in your music the art of getting it "right" would be finding that balance where you have the necessary loudness to compete with other tracks in your genre but also a decent level of depth to mesmerise the listener.
Depth is important, because it helps the listener submerge into the music. Loudness on the other hand catches their attentions and keeps them on their toes. If either one is out of balance we could be compromising the experience of the listener.
